砧板肉

Here in Loudi, Hunan Province, Zhenban pork is usually served at the Spring Festival. It is a kind of preserved pork that is cut into thick and solid pieces like the cutting board (Zhenban). Locals believe that the thicker the meat is, the more fortune it would bring to you in the coming year.
在湖南老家,过年时我们会吃砧板肉。腊肉被切得很厚,像砧板一样,因而得名“砧板肉”。按照我们当地的说法,肉越厚,新的一年福气越厚。
And a special wine named Zaojiu is usually enjoyed along with the pork. Interestingly, its main ingredients——litchis, longans and red dates, are all in round shape, which signifies completeness and reunion in Chinese context.
吃肉时,人们搭配糟酒一起喝。酒里常伴有荔枝、桂圆和红枣,它们圆形的轮廓象征完整和团圆。
饺子 鱼

Dumplings are made to look like ancient Chinese gold ingots. The most popular fillings in our family include celery, which sounds like the word diligence in Chinese. Coins are also wrapped inside some dumplings, and those who choose them are supposed to become rich in the next year.
在中国的东北地区,人们对饺子情有独钟。传统的饺子被做成元宝的形状。我家特别喜欢吃芹菜馅的饺子,“芹”与“勤”同音,意味着“勤勤恳恳”。硬币也会被包进饺子里,谁吃到了带硬币的饺子谁就会在新的一年里财运滚滚。

In addition, fish is an indispensable part, for fish has the same pronunciation as yu in Chinese, which means surplus. For Chinese people, it’s always good to have saved something by the end of the year, so that more good luck will follow.
另外,鱼也是一道不可缺少的菜肴。因为在中文里“鱼”和“余”的发音相近。对中国人来说,年末有剩余的财富是一件好事,这样来年才会有好运。
酥锅

My family usually prepare a crispy pot in the run-up to Spring Festival. With a wide range of ingredients being added, mixed and stewed together, the crispy pot is almost like a treasure house, where you can explore different tastes and textures all in one pot.
春节临近,家里就会准备一锅酥锅。酥锅像是个宝库,食材广泛,可以“酥锅酥一切”。
It is called “crispy pot” because even the fish bones would become crispy after being stewed on fire for seven or eight hours. The taste, smell and color is a reminder of the pleasant recollections with my family during the Spring Festival.
在炉火上炖七八个小时,连肉鱼骨刺也酥烂可口,所以叫“酥锅”。形态晶莹、色似琥珀的酥锅的香味,就是家里的年味儿。
发菜猪手

Pig Trotter with hair-like seaweed is a traditional course in Guangdong Province, and it has the same pronunciation with “发财就手” in Cantonese, which means everything will go well in the new year and we will make a great fortune in the future.
发菜猪手是广东省的一道传统美食,在广东话中,这道菜的发音与“发财就手”很相近,它的意思是来年平安和招财进宝。
腊肉 香肠

Preserved pork and sausage are essential food for Spring Festival in Sichuan Province. Each year before the New Year's Eve, locals would purchase chunks of pork enough to be eaten throughout the entire holiday. In order to preserve the pork as long as possible, they would cover it in salt to dry, and hang it outdoors.
在四川,腊肉和香肠是春节的必吃菜品。每年除夕前,大家会买好足够整个春节假期食用的猪肉。为了能将肉保存更长的时间,肉经盐腌制过后,悬挂在户外。

As a result of the way it is processed, this kind of cured pork has a unique smoky flavor. However, it still tastes perfect by adding the spices, making it a must-eat dish for locals.
由于经过了腌制,腊肉通常有些烟熏味。在加入调料后,腊肉吃起来可口依旧,是我们当地人必吃的美食。
年糕

Sticky and yummy, the rice cakes are loved by both the old and the young in Zhejiang Province. Called 年糕 in Mandarin, they sound similar to 年高, which means "getting higher every year". Locals would tuck into these cakes, hoping to scale new heights in their study or work in the coming year.
年糕粘稠香甜,大小老少都喜欢吃。由于“年糕”与“年高”同音,所以年糕又有“年年高”的寓意。过年时人们吃很多年糕,希望来年的学习、工作步步高。
太平燕

Taipingyan, one of most well-known traditional snacks of Fujian Province, can also be found on the New Year’s table. It's a delicacy that combines many exquisite ingredients, including Yanpi (a flake food made up of chopped meat and sweet potatoes), shrimps and duck eggs.
福建省有名的传统小吃太平燕是我们过年必吃的一道菜,它由燕皮、虾仁和鸭蛋等多种原料组成。
Since "duck egg" in Fuzhou dialect shares similar pronunciation with “压乱”, which literally means suppressing chaos, the dish symbolizes safety for the upcoming year.
在我们福州话里,“鸭蛋”与“压乱”谐音,因而此菜寓意新的一年平平安安。
