Cultural Imagery
Chinese people in particular seek great joy from cooking and eating. Various flavors of the dish precisely reflect the ups and downs that everyone has undergone, yet altogether making up a homely life of warmth and vigor. Even every dish has its special meaning which expresses wishes to the future and memorizes the past.
中国人讲求从简单的食材中提取意义。平凡的烟火气中蕴含着人们对生活的感悟和对未来的美好祝愿。
在这次厨艺大赛中,选手们追求的不仅仅是味觉上的极致。为了使最终的作品符合抽到的主题,同学们必须开动脑筋,从食材、色调、造型等多个角度入手,阐释作品背后的文化内涵。

Sleeting in Silence 雨雪霏霏


Beneath the snow there hides surging green, as if to declare its vitality to the whole world that spring is on its way. Such a scene is vividly depicted through this dish which is called Melting Snow: Using egg white as the melting snow and cabbage underneath as the hidden green life. It tries to tell us that at a time when the snow melts and the old and new collides, we shall embrace the past and the future whole-heartedly.
初雪已悄然降临,积雪之下掩饰不住的盎然绿意,就像涌动的生命,仿佛宣告全世界,春天即将来临。这道菜选择用蛋白来做融化的雪,铺在绿色的空心菜上,描绘出菜名“融雪之时”的画面。在新旧相接的融雪之时,不畏将来,无惧过往。

With zucchini and okra, this course leads us to imagine a leaf boat floating quietly in the harbor. Maybe it has just gone back home with the harvest of a day as the sun sets in the west, spreading rays of golden lights.
西葫芦作船,秋葵为桨,这道充满想象力的菜品仿佛让我们看到:赤霞铺海,夕阳西下,回家的渔船满载而归。
江天相连,浑然一色。渔船悠悠,歌声袅袅,水中映出晚霞的橘光,被船桨划出阵阵涟漪。

Ingredient
The phrase “ Bread is the staff of life(民以食为天)” originates from Records of Grand Historian of China. The original version is “King's life depends on people, people's life depends on food”, indicating that king should concern about the people's livelihood, let them live and work in peace, so the country will be in stability and prosperity.
中国谚语“民以食为天”出自《史记·郦生陆贾列传》, 原句是“王者以民为天,而民以食为天”。中华民族自古以来就是重视饮食、热爱烹饪的民族。
在本次比赛中,五花八门的食材经过小厨师们巧手烹制,变成了一道道精美的菜品。或保留原料的原汁原味,或添加各种佐料,让各种食材碰撞出奇妙的味觉效应。

Mutton 羊肉

Mutton is an important ingredient cooked in this dish. It’s a tradition to have mutton during winter days for Chinese people.
羊肉是这道菜所用到的重要食材。在寒风凛冽的冬夜,吃羊肉可以给我们带来温暖和活力。
According to the five elements of Yin and Yang, winter belongs to Yin which dominates one’s aura and consumes one’s energy. Mutton is rich in nutrition. It promotes blood circulation, enhances immunity and tonifies the kidney. That’s why mutton is indeed a good way to warm up on a cold night.
按阴阳五行说,冬天属阴,阴气主导气场,消耗人体更多能量。而羊肉营养丰富,具有促进血液循环,增强免疫力,补虚温中的作用。

Douhua 豆花

Douhua(tofu pudding) is a special food used in this dish. It is placed around the plate in the shape of a flower. In the north of China, this kind of “soft tofu” is usually eaten alone with soy sauce. And in some places in the south of China, it’s more like a dessert and usually eaten with sugar.
这道菜使用了豆花这种特殊食材,把它摆放在盘子周围,做成花的形状。在中国北方,豆花常常用酱油拌着吃;而在南方,它则更像是一种甜点,人们会加入糖来食用。

Scallion, ginger and garlic 葱姜蒜

In almost every dish, you can see garlic with scallion and ginger. Actually, these three are necessary condiments in Chinese cuisine. It can not only add special flavor to the ingredients, but also remove the odd smell of fish and meat.
几乎在所有的中国菜品中,你都可以看到葱、姜、蒜。事实上,它们都是中国菜中必不可少的调味料。在菜品中加上葱姜蒜,不仅能提鲜,还可以有效去除鱼和肉的腥味。
口味篇
It is mentioned in the food documentary A Bite of China that taste is more important than anything else as far as food is concerned. The Chinese have never restricted themselves to a certain tedious food list.
美食纪录片《舌尖上的中国》中提到,“在吃的法则里,风味重于一切。中国人从来没有把自己束缚在一张乏味的食品清单上。”
In Chinese cuisine, there are thousands of ways to cook the same ingredients.
中国菜的烹饪技法数不胜数,同一种食材在不同的烹饪手法之下能呈现出不同的风味。

Delicate and Delicious 清淡可口

Finale of Summer makes good use of garlic to present its delicate taste. Garlic is chopped which can help potatoes and bean vermicelli remain their original taste. With the delicate smell of garlic, diners may feel that they have returned to the end of summer.
“夏日终曲”很好地利用蒜香味来呈现清淡可口的口感。大蒜被切碎,缓和了它本身微辣稍冲的口感,也使食材保持最自然的味道。伴随着清淡的蒜香,食客仿佛回到了夏秋相交的季节。
知识卡片 Delicate
“delicate”一词起源于古英语“delicat”,与“delight(令人愉快的)”和“delicious(美味的)”是近亲。既让人愉快又美味的佳肴用“精致”来形容再恰当不过,再后来,“delicate”又有了“清淡可口”的含义。

Spicy and Special 麻辣鲜香
除了参赛选手们,中传校园里的各路厨神都各显神通:南苑餐厅带来了特色美食“大展宏图”和“锦上添花”;溢香园餐厅带来了“菊花鱼”;梆子井餐厅带来了“欢腾鱼”“香辣牛蛙锅”等六道招牌川味美食……




作为中国八大菜系之一,川菜以火辣著称,辣椒和花椒的大量使用是辨别它的最好的方式。梆子井带来的“欢腾鱼”就是典型的川菜菜品。

“cuisine ”词源于法语,有“烹调”“菜系”的意思,与“dish”“food”不同,当我们想要表达地方、有特色的菜系时,常使用“cuisine”这个词。
But hot and spicy isn't all of Sichuan cuisine. The diversity of its flavor which is caused by different balances of sweet, sour, spicy and tingly draws people to fall for this special cuisine in spite of the burning feeling.
但火辣远远不是川菜的全部特征,甜、酸、麻、辣等各不相同的比例让它同时拥有丰富且多层次的口味,这也是为什么即使被辣到不行,仍有源源不断的食客为之着迷。
Besides Sichuan cuisine, Eight Regional Cuisines of China also inlude Shandong cuisine, Guangdong cuisine, Fujian cuisine, Jiangsu cuisine, Zhejiang cuisine, Hunan cuisine and Anhui cuisine. All of them have their own characteristics and surely worth a try!
除了川菜之外,中国菜系还包括鲁菜、粤菜、闽菜、苏菜、浙菜、湘菜、徽菜,每一种菜系都具有独特的风格,也都值得品尝!
